Amazake is a traditional Japanese semi-liquid meal made of fermented rice. Literally can be translated as "sweet" 甘 "sake" 酒, it has a creamy, thick consistency with a sweet flavor, served either chilled or warm.

Amazake is not only delightful as a drink but also versatile in various culinary applications, including as a substitute for sweeteners in patisserie.

Amazake made with rice typically has a color ranging from white like milk to light beige. However, it can develop a brownish hue due to the Maillard reaction, a chemical process between natural sugars and amino acids in the amazake.
